Jalapeno Poppers
Ingredients:
- 20 Fresh Jalapenos, 2-3 inches in size
- Two 8-ounce Packages of Cream Cheese
- 1 pound Thin (regular) Bacon, slices cut in half
- Toothpicks
Directions:
Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet with sides.
If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT).
Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place the wire rack
Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
Serve immediately, or they're also great at room temperature.
Sausage-Pepper Kabobs
Ingredients:
- ¼ Cup Olive Oil
- 2 Garlic Cloves
- ½ tsp Dried Oregano
- 1/8 tsp Salt
- 1/8 tsp Pepper
- 2 Large Onions
- 2 Medium Purple or Green Peppers
- 3 Medium Red Peppers
- 2 lb. Fully Cooked Kielbasa (smoked Polish Sausage)
- 12 Metal or Bamboo Skewers
Directions:
If using bamboo skewers, soak skewers in cold water at least 30 minutes to prevent burning. Prepare outdoor grill for covered direct grilling on medium.
In a small bowl, combine oil, garlic, oregano, 1/8 tsp salt, and 1/8 teaspoon freshly ground black pepper. Let stand while you cut onions, peppers, and sausages into 1-in. chunks.
Thread peppers, 2 at a time and alternating with one onion and sausage, onto skewers. Brush skewers with oil mixture.
Place on hot grill grate; cover and cook 10 to 12 minutes or until browned, turning occasionally. Place on platter to serve.
Strawberry Limeade Slushies
Ingredients:
- 2 cups Halved Fresh Strawberries, washed & hulled
- 2 cups Ice Cubes
- ¾ cup Water
- ¼ cup Lime Juice
- 4 Tbsp Sugar
- 4 Fresh Strawberries for garnish
- Lime Slices for garnish
Directions:
Place all ingredients, except those for garnish, into a large blender. Process until smooth.
Pour into cups and garnish with fresh strawberry and lime slice if desired.
Serve immediately.
