When the weather outside is frightful, a warm cozy drink is so delightful.
Mulled Cranberry Apple Cider
- 4 cups cranberry juice blend or cranberry cocktail
- 4 cups apple cider or apple juice
- Peel of 1 orange, cut in large strips
- 1-inch piece of ginger, peeled and sliced
- 2 (3-inch) cinnamon sticks
- 4 whole allspice berries
- 4 whole cloves
Optional sweeteners: honey, brown sugar Optional garnishes: cinnamon sticks, orange slices, fresh cranberries
Place all ingredients in a large pot and bring to a boil. Reduce heat and simmer, partially covered, for 30 minutes. Strain and serve warm.
Caramelized White Chocolate "Hot Chocolate"
Two 6-ounce servings
- 4 ounces white chocolate
- 6 ounces milk
- 2 ounces cream
Vanilla bean, optional Cinnamon stick, optional Salt, to taste
Preheat the oven to 300°F and put the white chocolate in a glass or ceramic baking dish. No need to chop. Toss it in the oven and roast, stirring every 10 minutes or so. The white chocolate will be lumpy and crumbly, but that’s okay. Keep going until it takes on a peanut butter-like color, about 30 minutes total.
Meanwhile, bring the milk and cream to a simmer in a small pot. If you like, toss in a vanilla bean or cinnamon stick to add another layer of flavor.
When the white chocolate comes out of the oven, scrape it into the hot milk-mixture and whisk until smooth. Season with a pinch of salt. Ladle into mugs and enjoy.
- 1/3 cup 2% milk
- 2/3 cup eggnog
- 1 (1.5 fluid ounce) jigger brewed espresso
- 1 pinch ground nutmeg
Pour milk and eggnog into a steaming pitcher and heat to between 145 degrees F to 165 degrees F (65 to 70 degrees C) using the steaming wand. Brew the shot of espresso, then add to mug. Pour the steamed milk and eggnog into the mug, using a spoon to hold back the foam. Spoon foam over the top. Sprinkle nutmeg on top of the foam.
